Summer’s New Cocktail Recipes For Golden Hour

Move out the way margaritas, scotch is about to make a splash this summer. As much as we love our margs by the pool, a little refreshing change is needed every now and then and we just discovered a new cocktail recipe that is equally delicious and gorgeous to look at. If you haven’t heard about Chivas Regal,  you may want to listen up. It’s a the award-winning, luxury blended scotch whiskey that is smooth and robust with notes of vanilla, hazelnut, and butterscotch. Its so rich and satisfying, drinking it neat is so sweet (enter new Hozier song “Too Sweet” lol), but we found mixing it with summer fruit juices have totally leveled up our cocktail game. Just for summer 2024, Chivas Regal has partnered with Goya – the largest Hispanic owned food company in the US and premier source for authentic Latin cuisine – to release a limited-edition “Golden Hour” summer cocktail kit in select US markets. The kit includes all the key ingredients: Chivas 12 Year Old Scotch Whisky, Goya Pineapple Nectar, and Goya Coconut Water. These tasty elements allow anyone to effortlessly make a Pineapple Gold Rush or a Chivas Coco Ice (keep scrolling for the recipe below) cocktail at home. These cocktails prove that Scotch can be enjoyed during the summer months, especially when it’s with friends against a beautiful summer sunset, or LA’s favorite time of the day – Golden Hour. 

Our Editor-in-Chief, Erika De La Cruz, is loving that the sun has come out to play in LA, because setting up meals al fresco is one of her favorite things to do and she always adds a little intention behind each moment. This year, she made it a goal to become fluent in Spanish and decided to devise a game of studying during each meal or happy “golden” hour outside. She’ll write phrases, words and expressions on flashcards and quiz herself and her husband Jock (he’s been learning Spanish too!). Just like Chivas’ passion to encourage people to stand tall, be ambitious and aim high, Erika never wants to miss those tiny moments to be present, be aligned with her goals and strive to reach them everyday. It’s also why her vision boards are always around her too to keep her on track. 

The Chivas Coco Ice was the perfect cocktail for this study session. It’s easy to make, shake and pour in less than 3 minutes. Plus it looks beautiful! The color is a gorgeous summery golden yellow and looks best poured over in a low ball glass over round ice balls. Here are some trays that have helped us get those cool ice balls. The taste of this drink is not too tart either. It’s the perfect balance of citrus & whiskey and is so refreshing you’ll be wanting to another round. Here’s the simple beyond simple recipe:

  • 2 parts Chivas 12
  • 1 part Pineapple juice
  • 3 parts Coconut Water
  • Add all elements, shake & pour over rocks
